We need to eat our greens and vegetables. We know that. Does it count if your veggies are baked into delicious cakes, cookies, and brownies? Even if you aren’t sure about the answer to that one, it doesn’t take away from the fact that some of our favorite vegetables, which are usually saved for savory dishes, can make excellent additions to many a sweet treat.
Let’s not get into the fact that a number of the ‘vegetables’ that we eat are in fact fruits (avocados, cucumbers, pumpkins, etc.). We are looking at foods that are culinarily considered a vegetable and are mostly found in appetizers and main courses. These are the veggies that have been turned on their heads and reimagined into these great OGP sweet recipes. Don’t like to eat your greens? Try a kale brownie!
1. Chocolate Beet Cake

Okay! To be fair, sweet potatoes have long been enjoyed in sweet treats, especially around the holidays! This decadent dessert is packed with nutrients from both the sweet potatoes and the cacao. It’s also gluten-free!
3. Garam Masala Chocolate Oat Cookies

These Garam Masala Chocolate Oat Cookies by Claire Ragozzino are really easy to make and are full of spicy goodness. Though not in the title, the secret vegetable ingredient in these cookies is butternut squash or pumpkin puree. These cookies also come with a beautiful blend of spices, oats, and chocolate chunks.
4. Steamed Sweet Corn Cake

These ‘kuihs’, or cakes, are a Southeast Asian dessert. In this recipe for Steamed Sweet Corn Cake, Daphne Goh takes a traditional recipe and makes it vegan. These little treats are steamed instead of baked and can be enjoyed at any time of the day. They are gluten-free and refined sugar-free, too.
5. Carrot Cake With Cream Cheese Frosting

We can’t have a ‘veggies for dessert’ list without a classic carrot cake. This Carrot Cake With Cream Cheese Frosting by Kristina Jug & Mitja Bezenšek is absolutely stunning. The cake is cut through the middle and sandwiched together with vegan cream cheese. Then, it is topped with more vegan cream cheese and a sprinkling of chopped nuts.
6. Cinnamon Zucchini Cakes

These Cinnamon Zucchini Cakes by Fabio Gallo are soft, fluffy, and perfectly spiced. Summer can bring an abundance of zucchinis to your home garden, so having zucchini recipes on hand is a must. These little cakes have bites of walnut of raisins and a sweet, soy yogurt-based glaze.
7. Pumpkin Mousse

8. Pistachio Avocado Ice Cream

With just four ingredients, you can have a big bowl of Pistachio Avocado Ice Cream by Karielyn Tillman. First, you have to make some pistachio nut butter by blitzing pistachios in a food processor. Next, you add your avocados, some maple syrup, and vanilla to the nut butter and blend it all together. You just have to wait for it to set in the freezer. Serve it with some extra chopped pistachios.
9. Orange Parsnip Muffins

These Orange Parsnip Muffins by Ashley Smyczek are made with coconut and garbanzo bean flour giving them an extra protein boost. The parsnips have a natural sweetness that works perfectly with the tang of the oranges. These little muffins are a great breakfast snack and make a wonderful dessert when topped off with an orange glaze.
10. Green Machine Brownies: Kale, Zucchini and Avocado

If kale just isn’t your thing, but you know how good it is for you, why not try disguising it in this fudgy chocolate brownie.
