Oat Milk Panna Cotta

Makes 4 portions

  • 2 cups oat milk
  • 1 package ( 1/4 ounce) powdered gelatin
  • 2 tablespoons water
  • 1/4 cup honey
  • 1/4 teaspoon vanilla extract

In a small bowl, combine the water and the package of powdered gelatin to allow for the gelatin to “bloom”. In a microwave safe container, add 1/4 cup of the oat milk, honey and vanilla and microwave for 1 minute on high or until the mixture is hot. Add the “bloomed” gelatin to the hot oat milk mixture and mix until the gelatin full dissolves. Add the hot oat mixture to the remaining 1 3/4 cup oat milk and stir to combine. Evenly pour the mixture into 4 glasses. Place in the refrigerator for 2 to 4 hours or until the mixture is set. It will still have a slight “giggle” in the middle. Right before serving, top with fresh fruit and granola (optional). Enjoy!
