Garlic kheer is also known as ‘Benami kheer’ and it dates back to the Mughal period. Conceived in the royal kitchens of the time, it is called ‘benami’ or unknown because its key ingredient, garlic, was kept a secret. Constituents of this amazing dish includes garlic, milk, saffron, white vinegar, sugar and cardamom. The garlic is first steeped in vinegar and then boiled three times, thus toning down the garlicky flavour.
