August is prime time for produce. The fruit is amazing, and so are the vegetables. If you’ve been able to visit a farm stand or farmers’ market, you’ve seen the glistening piles of colorful produce, and if you have little-to-no self-restraint (like me), you’ve probably come home with bags full of it. Now comes the fun part—figuring out how to put all of that August farm fresh bounty to good use, and use it you must. You’ll be looking back on this month all too soon!

What Vegetables Are in Season in August

August is peak season for vegetables, so here’s a handy list of the ones you are most likely to see at markets and grocery stores. Many supermarkets buy local, so keep your eyes out for signage that indicates that certain vegetables are from the region, and therefore super fresh:

  • Tomatoes
  • Corn
  • Zucchini
  • Summer Squash
  • Eggplant
  • Peppers
  • Herbs (such as Basil, Thyme, Oregano, Dill)

Corn and zucchini join forces in a simple-to-make fritter that will become your favorite appetizer of late summer. A Nicoise salad gets a modern update with okra. Red peppers re-roasted and turned into a mayonnaise spread you will want to slather on everything. Colorful carrots are roasted and topped with a vibrant green spinach parsley pesto. The colors of all of these dishes will make you hungry, and the flavors will live up to the promise of the photos.

So don’t be shy when you hit that farmers’ market. There are loads of opportunities to put these vegetables to excellent use.
