There’s something about Drew Barrymore that is just so lovable. The actress turned show-host turned beauty entrepreneur doesn’t miss a beat and maybe it’s because she’s fueling her body with the goodness of this delicious recipe.

Ok, that’s a stretch but we’re sure it helps!

She took to Instagram to share the cooking process with her followers in a *slightly chaotically filmed* reel.

“A snowy day calls for vegetable soup in my @cookwithbeautiful Dutch Oven!🍜 #dishitwithd episode 1,” she wrote.

We can only hope that the fact she titled it ‘episode 1’ alludes to the fact that we have many more recipes to come in this series. Sign us up.

So without further ado, here’s how to master Barrymore’s veggie soup.

Ingredients:

  • 3 large leeks, chopped up to the white part
  • 2 tablespoons of olive oil
  • 2 zucchini
  • 1 small bunch of carrots
  • 5 tiny waxy potatoes
  • 6 cups of vegetable stock
  • 2 tablespoons of tomato paste
  • 1 tablespoon of Harissa pasta (optional)
  • 1 can of chickpeas
  • Salt and pepper to taste
  • Crusty French bread

Method:

  1. Sweat your leeks for 5 minutes to release all the goodness and only then can you add the rest of your vegetables
  2. Add in the veggies and cook down for around 3 minutes
  3. Season as you go!
  4. Add in the veggie stock and tomato paste. You can also add 1 tablespoon of Harissa paste if desired for smoke and spice
  5. Add one can of chickpeas and simmer for 25 to 30 minutes partly covered
  6. Blend gently as you want to keep a little texture and some of the veggies in tact
  7. Serve with cracked black pepper and crusty French bread
