Preheat oven to 375 degrees. In a large mixing bowl, cream butter, shortening, then mix in sugar, dark brown sugar until well blended. Mix in eggs, vanilla. Add allpurpose flour, whole-wheat flour, baking soda, salt. Mix in oats. Drop by rounded spoonsful onto prepared baking sheets. Bake 375 degrees for 12 minutes or until cookies show slight browning at edges. Let cool on baking sheet for two minutes; remove to finish cooling on a rack. When completely cooled, spread the tops with the browned-butter cinnamon frosting.
Browned-Butter Cinnamon Frosting
¼ cup (½ stick) butter
2 cups powdered sugar
3 tablespoons half & half (or cream)
1 teaspoon vanilla
½ teaspoon cinnamon
In small saucepan on stovetop over medium heat, brown butter until it’s a golden brown, transfer to a medium mixing bowl. When cooled, add powdered sugar, half & half (or cream), vanilla, and cinnamon. Whip with a hand mixer until desired consistency. Frosting should be easily spreadable but not runny.
