Coffee powerhouse Stumptown Roasters announced Jan. 2 that all of their cafes will now use oat milk by default in every milk-based drink—a move that’s been described as “peak Portland,” (“Peak Portland? Stumptown offering oat milk as the default milk option,” Jan. 3).
Readers may be surprised to learn that Stumptown isn’t the first in Portland to experiment with changing the default. In partnership with the Better Food Foundation, Guilder Cafe piloted the removal of cow’s milk as the default in 2021, asking customers which milk they would like instead of automatically supplying dairy. In going a step further and implementing an oat milk default, Stumptown is the latest in a series of businesses, venues and institutions to make the switch.
Pivoting away from dairy is a simple but effective way to curb carbon emissions. Serving plant-based milk by default increases the uptake of more sustainable options while still allowing customers to request dairy if they choose. More than half of Stumptown customers were already requesting oat milk in their drinks, and as GenZ and Gen Alpha come of age, demand for plant-based milks will continue to rise. More racially diverse and eco-conscious than their elders, GenZ already drinks 550% more plant milk than GenX.
Stumptown’s announcement is evidence that plant milks are the future of coffee. Thanks to their leadership, it’s easier than ever for Portlanders to stick with New Year’s resolutions, be it eating healthier, more sustainably or more humanely. Kudos for making coffee a more inclusive industry, and cheers to 2023!
