Vanilla and orange is a fantastic combination, one that reminds me of orange cakes. It makes these overnight oats gently sweet without adding sugar, although you could always trickle a little honey over the top. Use whatever fruit is in season: right now, British cherries are good and blackberries are ready for foraging, too. This delivers a portion of grains and dairy.
Timings
Prep time: 5 minutes, plus overnight chilling
Serves

- 6 tbsp porridge oats (about 50g)
- 120ml whole milk
- ½ tsp vanilla paste
- grated zest from a 4cm-square piece of orange peel
- 3 tbsp full-fat Greek yoghurt
- A handful of cherries and berries
- 1 tsp pumpkin seeds (optional)
Method
- Mix the oats, milk, vanilla and orange zest in a glass or jar. Cover and refrigerate overnight. To serve, top with yoghurt, berries and (if using) the pumpkin seeds.
