crunchy-vegetable-wrap600_2_origFresh vegetables will soon be plentiful in Arkansas and creating vegetable wraps is a great idea for using some of them, according to Easter H. Tucker, interim family and consumer sciences program leader for the University of Arkansas at Pine Bluff. Wraps are full of fresh, colorful vegetables and are a great way to eat nutritiously. Making wraps is also an easy way to involve kids in the kitchen.

Crunchy Vegetable Wrap

2 Servings

Ingredients
4 Tbs cream cheese, low fat
1/2 tsp ranch seasoning mix
2 whole wheat flour tortillas
1/3 cup broccoli, chopped
1/3 cup grated carrot
1/2 tomato, diced
1/2 green bell pepper, seeded and diced
2 green onions, chopped

 Instructions

  1. In a small bowl, stir ranch seasoning into cream cheese.
  2. Spread cream cheese mixture onto both flour tortillas, staying one inch from edge. Sprinkle vegetables over cream cheese. Roll each tortilla tightly.
  3. Cut tortillas in half or into slices and serve.
