This simple cooked salad will be a lifesaver on your busy days.

A basic grilled veggie salad is easy to make and tasty enough to have all week. Because the vegetables are all cooked, you don't have to worry about limp greens. This dish actually gets better the longer it marinates!

Grilled Vegetable Chopped Salad Recipe:

Ingredients (serves 4-6):

  • 1 medium eggplant, peeled and cut into thick disks
  • 1 large zucchini, cut into thick slices lengthwise
  • 2 medium carrots, peeled and cut into thick slices lengthwise
  • 1 red onion, peeled and cut into thick slices
  • 1 ear of corn, shucked
  • 1 red pepper, seeded, and cut into large, flat pieces
  • 2 portabello mushrooms, stems removed
  • olive oil for basting and drizzling
  • 1-2 T. balsamic vinegar
  • salt, pepper, and garlic powder to taste

Method:

Preheat your grill pan, panini press, or broiler. You can easily use each of these methods to get a good char on your vegetables. Toss your cut veggies with a generous drizzle of olive oil and a sprinkling of salt, pepper, and garlic powder.

Grill your sliced vegetables for about 2-3 minutes on each side, making sure to get some good grill marks or charred spots. As they cook, set them aside in a big bowl and move on to your next batch.

Carefully slice the corn kernels off the cob. Chop the other cooked vegetables into large chunks and toss with the balsamic vinegar, salt, pepper, and garlic powder to taste. Let the flavors blend in the refrigerator for at least 30 minutes before serving.

Variations:

  • You can eat this as is, or on a bed of salad greens like baby kale, spring mix, or arugula.
  • Feta or goat cheese crumbles add a tangy touch if you want a little something extra on top.
  • If you can't find fresh corn to grill, just add in a drained can of corn kernels before dressing your salad. Don't skip this ingredient though, it really brightens up the dish.
  • Add some crunch with toasted garlic crumbles or fried onion strings.
