Michelle Bonicelli from Tulsa's OSU Extension Center joined us in the Cooking Corner on Wednesday to show us how to make an Overnight Oat Pie
Ingredients
• 1 cup Old Fashioned rolled oats
• 1.5 Tbsp. Chia Seeds
• 1 cup Milk of choice
• 1.5 tsp. Vanilla extract
• Pinch of sea salt
• 1.5 Tbsp. Raw honey or pure maple syrup
• 6-9 Tbsp. unsweetened Greek Yogurt
• 3/4 cups fresh or frozen chopped berries
and/or fruit of choice
Instructions
1. In a large mixing bowl, add oats, chia seeds, milk, vanilla, salt and sweetener of choice then
thoroughly stir to combine.
2. Add this mixture into a 9 X 9 shallow glass serving dish using a spatula to prepare a nice even layer,
then refrigerate this part at least one hour to thicken before adding your top layers.
NOTE: You can prepare this in the afternoon, set in the fridge, then right before serving add yogurt
topping and fruit topping.
3. Once it sets up a bit, top with a layer of Greek yogurt and fruit or berries, then cover with plastic
wrap and refrigerate overnight. It will last up to 3 days in the fridge covered with plastic wrap.
