The store has introduced a new version with spring peas and other vegetables, made in eight-inch rounds like crustless quiches.

Matzo brei, a scramble of eggs and broken matzo that’s often a Passover breakfast staple, can be given a loftier assignment at the Seder table. If your observance is not strictly kosher for Passover, you might consider Breads Bakery’s matzo brei to serve alongside the chicken or brisket. They have been making it with mushrooms for several years and now has a version made with spring peas and other vegetables. In eight-inch rounds, like crustless quiches, they serve four to six but are not kosher. Warm them before serving. They are available for pickup at Breads Bakery near Union Square, Lincoln Center and the Upper East Side.
